Veggie Muffins are a nutrient-rich snack for babies and toddlers, featuring broccoli, zucchini, cauliflower, and mushrooms, perfect for baby-led weaning and supporting healthy eating habits.
1x 25g Nourishing Bubs broccoli cube, defrosted
1x 25g Nourishing Bubs zucchini cube, defrosted
1x 25g Nourishing Bubs cauliflower cube, defrosted
2 small mushrooms, grated
½ cup shredded mozzarella/tasty cheese
1 egg
½ cup extra virgin olive oil
¾ cup milk
1 cup wholemeal flour
¼ tsp baking powder
Preheat the oven to 180°C and line or grease a muffin tray.
Combine all wet ingredients together, then stir through dry ingredients to combine.
Scoop 1½ tablespoons of mixture into each muffin tin and sprinkle a little extra shredded cheese on top.
Bake for ~20 minutes until golden and cooked through. Let cool for 10 mins on a wire rack.
Suitable once bub has been introduced to dairy, wheat and egg.
