These Tofu, Salmon & Veggie Fritters are a nutritious and delicious finger food, packed with protein and vitamins to support your baby's growth and development.
200g firm tofu
95g canned salmon, bones removed
1x 25g Nourishing Bubs Broccoli cube, defrosted
1x 25g Nourishing Bubs Parsnip cube, defrosted
½ carrot, grated
¼ cup breadcrumbs
2 eggs
Drizzle of Extra virgin olive oil, for cooking
Wrap the tofu in a paper towel and press to remove any moisture. Drain the salmon.
Using your hands, crumble the tofu into small pieces and place in a bowl with all other ingredients (besides oil). Stir until it forms a thick mixture that binds well.
Heat a medium sized pan over medium heat. Drizzle with olive oil.
Use a tablespoon of mixture to create each fritter. Cook for roughly 90 seconds on each side, pressing down when you flip to create a flat fritter shape.
Repeat with remaining mixture.
Suitable once bub has been introduced to fish, soy, wheat and eggs.
