These yummy pumpkin pie bliss balls combine the goodness of pumpkin and rolled oats with a gentle mix of spices and sweetness to provide toddlers, kids and adults alike with a tasty and nourishing boost of energy. Free from nuts, these are the perfect lunchbox snack. They can be kept in the refrigerator for 3 days and frozen up to 3 months, so you can keep some on hand at all times for when hunger strikes.

Nourishing Group Kitchen
1 cup rolled oats
6 x blocks Nourishing Bubs Pumpkin, defrosted (150g or ~1/2 cup)
1 tsp ground ginger
1 tsp ground cinnamon
1/3 cup desiccated coconut
5 dates, softened in hot water & chopped
2 tbsp coconut oil
Place all ingredients in food processor and process until well combined.
Refrigerate mixture for 30 minutes – 1 hour to allow to firm up.
Roll teaspoon portions of mixture into small balls.
Place on lined tray or in container.
Keep refrigerated for 3 days or frozen up to 3 months.
