1 zucchini, grated
1-2x 25g Nourishing Bubs Zucchini cubes
1 egg
½ cup shredded mozzarella
¾ cup wholemeal flour

Greek yoghurt
Strawberry puree

Directions

Zucchini Fritters

Drain out the excess moisture from the grated zucchini by wrapping in a cheesecloth or multiple layers of paper towel and squeezing the liquid out.
Add all ingredients to a large bowl and mix until well combined.
Heat a drizzle of extra virgin olive oil in a medium sized pan over medium heat. Using a tablespoon, spoon out zucchini fritters to your preferred size and use the back of the spoon to flatten them slightly.
Cook on both sides for 2-3 mins on each side, until golden brown.
Allow to cool before serving.

Serve with:

Greek yogurt and strawberry puree mixed together plus sliced banana on the side.
