This delicious Berry Baked Oatmeal is a great alternative to porridge or cereal, and perfect for eating on-the-run!
It is made with the goodness and fibre of rolled oats and gently sweetened with our Nourishing Bubs Fruit purees. You can play around with different combinations of mix-ins and toppings, to keep everyone in the house happy, not just the little people.
This recipe is suitable from 8/9 months when your little one is handling a little more chewing and texture. Cut into easy to eat fingers. Also suitable for freezing in portions.

2 Chia Eggs (2 tbsp chia mixed with 6 tbsp water) or 2 Eggs
300mL Oat milk, or milk of your choice
1 tsp vanilla extract
8 x 25g Nourishing Bubs Fruit Purees (4 x Plum + 4 x Pear or 4 x Apple), defrosted
2 cups traditional rolled oats
½ cup desiccated coconut
2 tsp baking powder
1 cup fresh or frozen blueberries
Preheat oven to 180°C. Grease or grease and line with baking paper, a 22cm square cake tin or similar (I used a 26cm x 20cm rectangular baking tray which also worked really well and I just greased it).
Mix dry ingredients together in a medium sized bowl.
Mix the wet ingredients together (excluding blueberries), ensuring the defrosted puree is not too hot, especially if using real eggs, as opposed to chia eggs.
Make a well in the dry ingredients and pour in the wet ingredients. Mix to combine. Fold in half the blueberries.
Pour into prepared dish and sprinkle remaining blueberries on top, poking them down slightly into the mixture. Bake for around 35 minutes or until top is golden and mixture feels set. Allow to cool then cut into slices/fingers.
