This baby-friendly vegetable gnocchi recipe features Nourishing Bubs veggie cubes like sweet potato, parsnip, and pumpkin, combined with plain flour to create soft, bite-sized gnocchi pieces perfect for little ones. You can choose any veggie puree cubes you like! They can be served on their own or mixed in with a tomato based sauce.
Using the microwave, defrost the Nourishing Bubs vegetable cubes for 40-50 seconds.
Add the vegetable purees to a large bowl with the flour, and mix until it has mostly come together.
Transfer to a floured bench and continue to knead until a firm dough is formed.
Separate the dough into 3 or 4 sections and roll out into a long log. Using a knife or dough scraper, cut the gnocchi into 2cm pieces.
Bring a small pan of salted water to the boil. Cook the gnocchi until they rise to the surface. Remove with a slotted spoon.
Serve with your favourite pasta sauce or some olive oil/butter and parmesan.
Suitable once bub has been introduced to wheat.
