A delicious snack, packed with the protein and good fats from peanuts and a delicate chocolate taste from antixidant rich cacao. This scrumptious snack is a perfect little boost of energy for even the most energetic toddler!
¾ cup smooth peanut butter
1 cup rolled oats
Generous pinch salt (if PB is unsalted)
2 heaped tablespoons cacao
10 medjool dates, soaked in hot water
¼ cup coconut oil
Desiccated coconut, for rolling
- Blend all ingredients, except desiccated coconut in a food processor until mixture starts coming together.
- Roll heaped teaspoons of mixture into balls. Place coconut in a shallow bowl and roll balls through it to get a good covering. Place on a tray or directly into Tupperware and then refrigerate.
- Best stored in refrigerator or freezer to extend shelf life.
