Green Mac & Cheese is a nutrient rich, creamy pasta dish loaded with broccoli, spinach, and peas, offering essential vitamins and minerals for your baby's healthy growth.
1 broccoli
1 cup baby spinach
½ cup frozen peas
1 tsp nutmeg
½ tsp pepper
300mL thickened cream
2 cups shredded tasty cheese
½ cup grated parmesan
250g macaroni
Chop broccoli, including stem, into large pieces. Boil in a medium saucepan with peas, until softened and tender. Remove from heat and drain
Cook macaroni per packet instructions and drain.
When broccoli is slightly cooled, cut into smaller pieces. Place half of the heads and all of the stems in a blender with the peas, spinach, nutmeg, pepper and cream. Blend until smooth and vibrant green.
Place broccoli sauce mixture in a large saucepan over low heat and bring to a simmer. Gradually add in the tasty cheese and parmesan and continually stir to thicken the sauce. Stir in the pasta to ensure all is coated.
In a separate frying pan, place the remaining small florets of broccoli head with a drizzle of extra virgin olive oil. Cook florets until slightly charred.
Divide pasta mixture and serve with charred broccoli.
